Potato volcano with dino escalope and peas
WURZENER shelled green peas and WURZENER cornflakes with no added sugar make for a creative family meal in this spectacular potato volcano with dino escalopes. Creamy mashed potatoes and tender green peas form the volcano, while the crispy breaded turkey escalopes in the shape of dinosaurs provide fun and enjoyment on the plate. With tomato ketchup as ‘lava’, the dish is an eye-catcher on any dining table. Preparation
Potato volcano
Peel, wash and chop the potatoes. Cook in salted water for about 20 minutes.
Boil the WURZENER shelled green peas in plenty of water (approx. 3 to 4 times the amount of peas) with a pinch of bicarbonate of soda for about 30 minutes.
Heat the milk and butter and add to the cooked potatoes. Mash everything to a puree and flavour with salt and nutmeg.
Shape the mashed potatoes into a volcano on a plate and press a hollow into the top.
Let the tomato ketchup run down from the top to create an impressive lava explosion.
Dino escalopes
In a soup bowl, whisk together the eggs, medium-hot mustard and a pinch of salt to prepare the breading.
Crush the WURZENER cornflakes either in a food processor or with a rolling pin in a sealed bag and place in another soup bowl.
Place the flour on a third plate.
Flatten the turkey escalopes with a meat mallet. Dredge each escalope first in flour, then in the egg mixture and finally in the WURZENER cornflakes. Lightly press down the breading.
Heat a large non-stick frying pan over a medium heat with 4 tablespoons of clarified butter.
Fry the breaded escalopes for about 5 minutes on each side until golden brown.
The fried escalopes can be shaped and served as desired using a metal dinosaur cookie cutter.

Ein echter Hit bei den Kindern!
Der Kartoffel-Vulkan ist nicht nur lecker, sondern auch ein echter Hingucker. Die Dino-Schnitzel sind knusprig und die Erbsen passen perfekt dazu. Wird definitiv wieder gemacht!
